After picking and pressing the pristine juice was juice was fermented at cool temperatures between 13-15 deg to enhance Sauvignon Blancs distinctive flavour profile. Approximately halfway through fermentation 20% of this juice was transferred to seasoned French oak barriques to complete fermentation and give the final blend increased texture and palate weight. Post fermentation the wine was left on yeast lees for six weeks prior to blending, filtration, then bottling in August 2024.

Intense aromas and flavours of passionfruit and guava with subtle citrus, floral and cut grass characters. Vibrant, lavish palate with a long minerally finish.
