Made from 100% Pinot Noir in the traditional method. Grapes were pressed for primary fermentation to tank before malolactic fermentation. It was then bottled with a yeast addition undergoing a secondary fermentation. After 18 months of lees ageing each bottle was riddled, disgorged and dosage.
Cellared for 5 years before release

A balanced complex palate with hints of strawberry and cranberry. Refreshing with fine bubbles and a fresh, dry finish.
